Poke Sallet in the spring

By Oreta Wright
Sun Columnist

The American Pokeweed is a perennial plant that grows in the Midwest states and Gulf coast areas. It is referred to as Poke Sallet or Poke Salad. Parts of the plant are highly toxic to livestock and humans, and it is considered a major pest by farmers. Nonetheless, some parts can be used as food, medicine, or poison if properly prepared.
The plant may reach a height of four feet. The stem is often red as the plant matures. They die back to the roots in the winter. The black berries are good food for songbirds.

Since properly stored vegetables will hold their flavor and nutritional value longer than those left in a plastic bag or set on the sunny kitchen counter, consider preserving some for the long winter ahead using one of several methods.  Read more in our e-edition:  http://www.etypeservices.com/SWF/LocalUser/Casscounty1//Magazine63389/Full/index.aspx?id=63389
